06 hhr temp not reading but a/c works

We’ll find out , the Stant that failed in mine would stay closed for to long, then it partially opened and would then close as it cooled off.
I tried on the kitchen range in a pot of boiling water , it opened after 8 minutes at 188 degrees F .
The AC Delco opened after 4 minutes at 180 degrees F , it opened more then the Stant .
The Moto Rad opened after 11 minutes at 187 degrees F about the same as the Stant.

I don't know how a failure would show up after running 20 minutes. P0128 would be much quicker.

That's where a good code reader comes in. It will give you the counts on each code. I was first taught that when working at the Cat dealer, always look into the most recent codes first. Don't assume.

By "counts" I assume you mean types. pending, current and permanent. Many times people will say "P0128 3 times".

Depending on the kind of code the first occurrence is pending, the second time is current the third is "permanent". Some permanent codes take 100 starts to clear after the current and pending have been cleared but it is only there for historical reasons, so the technician knows what has been going on.

Generally, not always, a pending code will not cause a CEL. A current code always cause a CEL. If ONLY a permanent code is present there will be no CEL.

I changed the thermostat again, this time an AC Delco. It worked... for a couple days but now I am having the same issue. Reads cool and gauge shuts down.

Before I changed the thermostat for the second time I used a computer to read my coolant temperature just to be sure it wasn’t a faulty read but that was spot on...

Did I get a second faulty thermostat?

Did you get AC Delco 131-158 the $30 one or the $15 one.
