No problem, just be careful with the wiring, disconnect the battery neg at the battery in the spare tire well, place a towel over the hatch latch so you don't get locked out.
send some time with the search window and Google to review these issues.
sometimes its a loose ground wire that causes many issues, check them for clean and tight connection

Wonderful! I really do appreciate your help! Trying to decide about changing the other sensor or just waiting until I have installed the new thermostat and see if that really was the problem all along! Car kicks out heat but seems to take forever to actually come up to temp. At this rate I am going to need to get a book on the darn thing!

It's that slow warm up causing the code, not the sensor, the T-stat

as a side note - with thermostat problems causing a slow warm-up (jamming open), when the P0128 code is generated, you will also find the A/C will be disabled, and the temp gauges/readouts will blank out on you. But the code is not always generated - all depending on how quick it gets up to operating temperature (quicker in warmer weather, and when restarted after sitting for an hour once it was warmed up - if that makes any sense).

Good News! Changed out the thermostat...good thing I did the rubber gasket was completely gone! Now its just to figure out what my new coolant temp will be since the old one was off for so long! And the check engine light went off!! Had to add any additive as there seems to be a slight knocking noise going on...ugh always something! Next to figure out where the sensor is for my outside temp reading.. Thank you all for all your help!

Since your's is a 2007, the temp sensor should be located in this place(yellow circle )
A little hard to get at since it's behind the bumper area.

Mine is a 2006 but I would think it would be in the same place. Do you happen to know what the sensor is called/ or looks like?

Ambient air temp sensor. Looks like a Xmas tree light covered in plastic.
