OK, one click and them "burping" sounds like a restriction in the filler neck, I'd start checking there.
Did this problem just start recently, or has it been a long term thing?
You could have a "special present" in your filler from the neighborhood kids, or just some random person being a snot if you're HHR is parked outside overnight.

Are you letting the pump click off by itself, or are you "squeezing" a couple more clicks into the tank?
If its overflowing when the pump shuts off automatically, you may have a restriction in your filler neck.
If you're "squeezing" in a few more drops and its overflowing, just let the pump shut off at the first click, overfilling can do some serious damage to the EVAP system and cost you some dough to rectify.
