A couple years ago I ordered both just to compare, haven't actually needed a thermostat yet (because I check everything else first, and it's almost always something else.)
Mahle is an OEM supplier. I put the Mahle & the ACDelco side by side and they were identical in every tiny detail. Hard to believe they didn't come out of the same factory. (I even looked for tool marks, don't think the parts were punched with the same dies, but they surely have more than one set.) I put them together in a pot of slowly heated water and they opened and closed lockstep, begining to open at 180 and fully open estimated at 190.
I should qualify this with a specific Mahle part number. It seems to be no longer listed at Rock Auto. I'll edit when I find it.
EDIT - It's Mahle TX12282. Widely available. Rock Auto once sold it for <$16 but it's out of stock. They call it Mahle/Clevite. The Euro sources describe it as Saab OEM. Google thinks it sells for $17-28 but I've seen it for $50. Pirates. I added some of my pics.
I think the stamped numbers are date codes. 337th day of 2019, and 81st day of 2020. These surely were made in the same facility.
Pretty sure I posted about it in these forums, perhaps in less detail, but with pics. Prolly a couple years ago? No idea when, really.

If you open MOTORAD 461180 (the first line in the list of Rockauto parts) - it is similar to GM12622410. Informational links to other parts of the same list speak about the same. I conclude that GM12622410 fits our car.
I see this part in my city at a price of 17 - 20 dollars translated from the ruble. I don't know how much this thermostat costs in the US, but in the USA the parts are usually cheaper..
MAHLE KNECHT TX12282 (German) is more expensive than GM12622410, $27 to $30.
There is another high-quality German manufacturer KRAUF, its specialization is starters, generators and fuel pumps. But its thermostat, similar to the GM12622410, costs less than $5 and is also available.
I think that if you set yourself the goal of saving money, you can find an inexpensive and high-quality part, incl. from GM.

But the problem is the cheap thermostats don’t open within the parameters of the ECM and the P0128 code lights up. I’ve installed MotoRad, Stant, Mahle AC Delco Gold and all failed within 3 to 4 months . Pay little bits at a time or pay up front fro the GM Original 131-158 180 degrees and be done with it.

"Similar" is not the same as "is". Most, if not all of the cheaper ones have an inner rubber gasket on the valve that will detach and block the valve open. Even a GM parts department will try to supply the cheaper one; you have to ask by part number.
The t-stat is a very generic thing; the basic requirements for the spec are diameter, temperature rating and if it has secondary valve. They are all "similar" or "fits" or "interchanges" or "compatible".
Try any one you would like to but, be prepared for the "I told you so". The only one that works for sure is ACDelco 131-158. I wish they would pay me, I have no relations with GM or ADCelco.
